Double-bean Burritos
tortillas (flour or wheat work best)
1 – avocado (peeled and cut into thin long slices)
1 – can fat-free refried beans
1- can (drained and rinsed) black beans
1 – package of 90 second in the microwave Santa Fe, Southwest, or Mexican rice
1 Tbls. - chunky salsa
Mexican mix grated cheese
Heat the refried beans in pan on stove. Heat black beans with the salsa in pan on stove. Prepare rice when beans are almost ready. Wrap tortillas in damp paper towels and heat to desired temperature in microwave. Spread refried beans on tortilla, then add some of the black bean and salsa mixture. Next put rice, a strip or two of avocado and then top with grated cheese. Tuck up the bottom end of tortilla and then rolls sides in one after another. Now eat!
Smothered Chicken
4 boneless, skinless chicken breasts
Durkee fried onions
2 cans – cream of mushroom soup
butter
garlic salt
white rice (I really like to use two bags of the Uncle Bens 90 second in the microwave white rice)
Preheat oven to 350°. Trim fat off of chicken breasts and place in a glass casserole dish. Put two pats of butter on each breast. Sprinkle garlic salt generously over chicken breasts. Cover breasts with the two cans of cream of mushroom soup and spread evenly. Now sprinkle the breasts with the Durkee fried onions. Place in oven and bake for one hour. Serve over rice.
This dish goes great with green beans.
